Healthy Chocolate and Banana Breakfast Cookies

Today I’m bringing you a super tasty and healthy chocolate and banana breakfast cookies recipe. These awesome cookies have 6 ingredients: oats, dates, banana, chia seeds, chocolate and lemon zest. They are gluten free, super nutritious and make an excellent grab and go breakfast for the busy bees.

When you buy cookies in the supermarket, they come in a box inside a sealed bag. They contain tons of refined sugar and other conservants that make them last a very long time. Which is convenient. The problem is that it it’s actually not so good for your health.

Processed foods are associated with cardiovascular diseases and weight gain. The high amount of refined sugar, grains and oils  are processed in our system very quickly because there are really no nutrients to absorb. This spikes your insulin levels and make you crave more sweet, resulting in eating more processed foods. It’s a never ending cycle, until you close the loop.

I’ve been working on consuming less refined sugar and for that I have been making my own sweets, using natural ingredients like dates or ripe bananas, for a natural sweet taste that is also full of nutrients.

healthy chocolate and banana breakfast cookiesI came across this healthy choco and banana cookie recipe from the gorgeous Carlota Bruna, a Spanish lifestyle blogger that is also a student of nutrition. She is a lover of nature, slow life and travels and she is also vegan and sometimes she posts wonderful recipes like this one.

What really catch my attention about this recipe and that is different from all other ones is that there is NO OIL included in the ingredients! I never thought you could make cookies without oil. Score!

Carlota’s original recipe is awesome but I have adapted it a bit to my liking. The original recipe has too much banana for my taste, as I don’t like cookies to be too moisty. I also didn’t have linen seeds so I swapped the for chia seeds which are also rich in fiber and omega3.

Ingredients

1 Cup of oats, 2 Ripe bananas, 1 TBSP of date paste (just put pitted dates in a food processor and add some water to form a paste. I keep it in the fridge for whenever I need it. Lasts a long time), 2 TBSP chia seeds, Hand full of dark chocolate chips or just chop 3-4 squares from a chocolate bar (no added sugar), Zest of half lemon

Method

Preheat the oven at 180ºC with fan.

Mash the banana first in a bowl and then mix  the rest of  ingredients together in a bowl and combine. Use your hands to make sure all the oats are covered with the banana and the date paste.

Take out a baking tray and put baking paper on it. Take about a TBSP of the mixture, make a cookie shape and place it on the tray. Repeat until done with the mixture. You might need to use two trays. 

When you are done place the trays in the oven and bake for 15 minutes. Then take the trays out, flip the cookies around and bake for another 10 minutes or until golden. This way the banana will cook through.

And that’s it! So easy and so delicious! I keep them in the fridge in an air tight container and they last about a week.
